Quick and Easy Taco Gnocchi - Yummy!

Ingredients

  • 1 lb ground beef
  • 1 package gnocchi
  • 1 clove garlic, minced
  • 1/2 medium onion, diced
  • 1 can Rotel
  • 1 packet of Taco Seasonings
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup water
  • 1 cup sweet corn, canned or frozen
  • 1/2 cup sharp cheddar cheese, shredded
  • 1 cup monterey jack cheese, shredded

Instructions

  1. In a medium stock pot, start boiling your gnocchi according to package directions.
  2. On medium heat in a large frying pan, cook your ground beef with the onion, garlic, salt and pepper.
  3. Once beef is no longer pink, drain the excess fat.
  4. Add the can of rotel to the cooked beef along with the taco seasoning packet and water.
  5. Lower heat to low-medium and simmer until about a 1/3 of the liquid is left. Add your cooked gnocchi and the corn. Continue cooking until almost all of the liquid is gone.
  6. Remove from heat, top with shredded cheeses and cover with a lid until they melt.
